What in the world is a spirited syrup?

This is where we infuse honey, herbs and a small amount of alcohol for 6-8 weeks on low heat! Why? This way we have a "syrup" that has not only the water and heat soluble properties but the alcohol soluble properties too!

Folklore and History

Blue elderberry was used and even cultivated by prehistoric man in sites across Italy and Switzerland. Ancient Egyptians also had an enduring relationship with the plant, with blue elderberry tincture found in many burial sites. Blue elder is also an important plant in many Pagan Goddess traditions, including those based around the Goddesses Venus and Holle.

Growth and Habitat

Blue Elderberry is a coarse shrub that is native to North, Central America and many European countries. Mostly found on the Pacific coast, this plant grows in a number of habitats and is fairly easy to find in the wild. It has cream or yellow flowers in the spring and purple berries in the fall.

Blue Elderberry can grow from a small container to a 15-foot tree in three years if it is happy.  It likes part shade or sun. It handles a variety of different soil moisture levels once established. The tree can handle moist soil near small streams and will thrive next to regularly irrigated areas. Once established, it also grows well in fairly dry soils, though in drier conditions it will go semi-deciduous in the summer and fall, and green up in the early winter. Drought-stricken trees often look attractive, developing uniquely gnarled branches and thicker trunks over time.
